If you prefer hiking in mountains rather than valleys, it might make more sense for you to head north from Sacramento and do your hiking somewhere around Redding or Mount Shasta along I-5, rather than stopping in the middle of a valley where the terrain is exceptionally flat. Not that I want to discourage you from checking out Sacramento, but if you have a destination in mind it would serve your timetable better to go north rather than east into the foothills.
