I think you will find that most large religious organizations find it necessary to have some sort of centralized office complex to maintain employees etc. especially Churchs of these sizes. I hope this answers your question.

Dude you are wrong. There are 1.1 BILLION Catholics in the world. The catholic church has 100 times more "members" than the LDS. It's not a competition and I don't want to argue, it's just a fact. You may be confused with the number of Catholics in the USA which is about 76 million. As you can see the Catholic church is quite larger. The Vatican, by the way, is an independent state, not part of Italy. I think the LDS needs large headquarters also because of the agressive efforts to expand that church worlwide.
