I ate at the Bubba Gump in Lahaina, Maui. Like a lot of chain restaurants from that genre, they make a significant portion of their revenue from alcohol sales. Liquor licenses for restaurants are finite in Utah; that is, there are a set number available. Until another business goes under and makes their license available, no new restaurants can get licenses. Also, the laws defining the serving of alcoholic beverages in establishments in Utah are complicated and intimidating. So I wouldn't exclude Bubba Gump from making an entry into the Utah market, but I would assume Utah would be near the bottom of their radar for future expansions.

One of the difficulties is the Zion Curtain (ask someone for an explanation!).
