There are myriad of old buildings/houses that have been converted to apartments for rent, too many to mention really. The city has a lot of really great spaces to rent and buy that have lots of character. Anything for rent that is in the Avenues, Capitol Hill, West Capitol and SugarHouse will be your best bet for finding what you're looking for.
There are many people that think SLC is a boring city. In my opinion those people just don't look around very hard. We have a great farmers market on the weekends, every niche neighborhood has a street fair, there are mutliple gallery strolls, lots of theater, entertainment, clubs, bars, etc. that any young professional would have a great time visiting. I know I do.
I actually have a friend who just graduated in architecture who was working for a firm here in SLC until recently. If you are still interested in more info, I can ask him about it.
