I think that one of the best kept secrets is Golden Spike National Historic Site. About 1 hour North of SLC-same trip you can hit Thiokol and their-Rocket Garden-kind of an oxymoron but since you are all the way up there..Also, the Spiral Jetty is near there too. Take all of you own food and water as you will find none at the above spots. Check out the gov't web for National Historic Sites to get the times that the trains come out, directions and fees.
Check out Red Iguana for some good Mexican food and the Blue Plate Diner for breakfast..
