I forgot to mention though, we got coffee. Whole bean, Peaberry, and it is VERY very good. We made a pot last night to see. We'd been buying the whole bean HEB stuff and this was better and cheaper! I am drinking some at this very moment.

Actually the reason we were over in the Quarry area in the first place is because we met up with someone from Craigslist to purchase their gently used Cuisinart "Grind & Brew" machine. So, we just had to try out the machine and the coffee yesterday.

We went yesterday on the way home. Not crowded at all with plenty of parking in front of the store. So far everything has been a hit I'm my house:
Truffle brownies
Garlic hummus
Banana muffins
Garlic French fries
Chili lime chicken patties
Oatmeal flake cereal
Coconut chips

With all the stuff above and the fruit and dairy products I thought it was going to be around $100 - it was not and I will be back!

I didn't read all 60 pages so this may have been mentioned before, but for all the amateur pizza makers in town...TJ's has an excellent, excellent low moisture whole milk mozzarella for 4.99/lb. It's a great deal for us non-professionals who can't get our hands on Grande or Polly-O here in S.A. and it's about $2/lb cheaper then HEB's private brand of the same (which is also very good, BTW).

Speaking of pizza...has anybody found any high gluten flour for sale anywhere here in town? The closest I've been able to find is King Arthur Bread Flour, which I really like, have been using for years and which makes excellent dough, but I would like to try my dough recipe with a high-gluten flour in preparation for the eventual opening of my pizzeria in a few years (I hope).

Let us know if you find any. I've got a friend who brings back a large canvas sack of flour everytime he visits family back in New York. His second choice is also King Arthur.

I don't know how practical it would be to what you are trying to do, but it is possible to extract gluten from flour. My wife used to do it for vegan chicken-fried streak. Basically, you wash the flour while kneading it and you end up with a ball of pure gluten.

Then there are also gluten enrichment products.

Good luck with the pizzeria. In my opinion there is always room for a superior pizza in this town.
