If you put a bowl of water in the smoker (and keep it filled during the entire smoking process,) it makes the meat very tender and juicy. Unfortunately a lot of BBQ joints fail to do this which just ruins the meat and turns excellent BBQ into mediocre BBQ.

OK....you are going to think I am TOTALLY CRAZY and I would too if I had not enjoyed myself....but stop by a VALERO gas station that has a "FRESH" kitchen....I stop by at 4:30 each morning and get either a brisket or bacon and egg taco....they make it ALL FROM SCRATCH!!!!! AWESOME!!!! Man, you can not BEAT $1.69 for a HUGE taco on fresh made tortilla with the "salsa" bar there.....beats the others HANDS DOWN! Again, mine is made at 0430 each morning....not sure if you were to stop by at 0900 if you would be nearly as impressed!

Dang, why did i pay $6 for my brisket taco at TC thanks for the tip.

I happen to like brisket taco's from TC as well. I moved here from Ft. Worth 20+ years ago, and had eaten at a TC in D/FW, and thought "Wow, this place is bad for even fast food Mexican".

Once I moved to SA though, I gave them another chance and found that their fajita's rocked! I frequent TC now, not only for their fajita's, but bean and cheese taco's, nachos, and other fast food type items, and yes, even brisket taco's.

I think some here might be missing the point. TC isn't trying to be a BBQ place, they are just putting a different spin on the taco. I don't go to TC expecting a BBQ experience, and I suppose others who like the brisket taco's aren't either. Personally, I think the brisket taco's are just as good as their fajita's!

I would put the "brisket taco" with FRESH flour tortilla and FULL of brisket from any "Valero gas station" up against TC ANY day...they are AWESOME!!!!!! You get like 3 X the meat....and for $1.99!!!!! Give one a try and please tell me how you feel they rate???? Be SURE you do one that has the "FRESH" sign on the outside...AWESOME hidden gem with FANTASTIC FOOD!!!!

I have gotten the tacos from Valero before and I totally agree with you that they are good for the price.

Not all the Valeros have those "fresh kitchens" however, just the really busy ones do.

I didn't know Valero had the brisket taco though.
