Jeez, sounds like you're counting yourself out of the game before you've even tried!

I don't see how your employment history being in the UK is going to work against you, most prospective employers rarely contact previous employers anyway. And since you have a very valid reason for not working for the past 2.5 years, I don't see anyone questioning why you've been out of the job market.

The big question is what kind of work are you looking for. Is it just a job where an application will suffice, or are you looking a little bigger for something that will require a resume? If the latter, than start working on it now. And remember that the only goal of your resume is to get you an interview, which will be your time to convince your prospective employer good reasons to hire you!

And there are jobs out there, start researching in the fields where jobs are that interest you. Don't let folks convince you otherwise, if you are determined to work and realistic on the kinds of employment and salary you are qualified for, there are opportunities out there!

Now get a positive attitude and go kick some ass!
