Bush's chicken is pretty much in the same class as church's, KFC and popeyes. They are pretty much all nasty, esp Bush's and Church's.

Raising Cain's is actually pretty good for a chain but as the OP mentioned, I would prefer fried chicken from some "ghetto" mom and pop type place. I wish I knew of one here. I know many in Waco from when I used to live there.

I wish we had a Raisin' Canes here in San Antonio that wasn't just in Terminal A at the airport... I moved here from Baton Rouge and sorely miss Canes. However, the best chicken I ever had, was in a really bad part of Baton Rouge, at a little ghetto drive-up called Frickin' Chicken. "Welcome ta da Frickin' Chicken. Can I get ya frickin' order?" I about cried when it shut down from folks being caught selling drugs at the drive-up windows...

I just looked up news on this, and apparently Canes is opening 20 locations in the San Antonio area in the next 5 years? Pretty sweet!

Radickes, just north of IH-10 on WWWhite Rd. about 2 blocks on the left hand side, an old gas station, the best Jalapeno fried chicken, 3 pcs, deep fried boneless thighs, and a big portion of homemade fries with skins, and a grilled face piece of sourdough bread. You can't beat it, but beware at lunch time they are crowded.

I'm sorry. I don't think chicken fingers or composite stuff is fried chicken. There must be bones! Why not mention chicken McNuggets of composite chicken. At least Bill Miller's has bones.

While scrolling through postings, I noticed a "Shift Manager" entry for Raising Canes on the Monster employment website. It lists the opening for the San Antonio area (78210).

Thought some might find this interesting.
