Salado has a couple different segments, bisected by Ft Sam for the time being. Full trail maps in this link City of San Antonio | Official Web Site - Parks & Recreation Department Unfortunately, none are loop rides so you're in/out on the same route. Only one where I've run into LOTS of joggers/walkers is Leon Creek between 1604 and Bandera.

Ah! I see! I rode from Lady Bird Johnson Park up to the McAllister Dog Park. These trails/paths are better suited for the hybrid bike I was planning on leaving for my visits. I can't see leaving my road bike if I won't be riding my usual 50-60 milers. I haven't researched, but are there any suitable dirt trails for mountainbiking?

The Leon creek greenway trail has a few singletrack offshoots, most are around OP Schnabel park. There's a few off-trail opportunities at McAllister also.

I see plenty of off-road bikers next to the portion of the Salado Creek Trail that runs between Blanco and Huebner.

Really? I've run Leon Creek from Valero to Grissom and find that all areas are pretty crowded with both at all the peak times.

I also think that at some point in the near future that area between Hardberger and Walker ranch will be completely paved. They've made some progress on the area where it starts right after Hardberger. Oh wait. That's not the same area. The area I'm thinking of is between Blanco and West. I haven't checked the area you're talking about.

Mission reach open all the way to Espada Mission as of today. No closed segments, and they have added the mileage counters!

I just saw on KABB that there are plans in the works for a westside hike/bike, ecosystem flood plane revitalization on the westside. Apperantly this is something that has been in the works for a bit but I hadn't heard of it. I cannot figure out where these would connect (whether to Leon Creek or Mission Reach). Does anyone have any info?

The Westside Creeks feed into the San Antonio River. Confluence park on the Mission Reach is were San Pedro Creek (one of the westside creeks) meets that San Antonio River. This park is currently being renovated and they hired some famous designers from LA, Ball-Nogues Studio, to design it.

The Salado Creek Hike and Bike trail at South Side Lions Park is also nice as you can also ride around the large lake in the park prior to entering the Salado Creek trail. There is also a large hill that you must travel from the lake to the community center at the park (next to Highlands High School). This portion does not have a dedicated path and most bikers travel on the paved street or off-road. You must have strength for this hill, most people I see can't peddle all the way up and get off and walk that bike up the hill.
