We are staying at Wyndham La Cascada on Dwyer.

Any thoughts on that location?

Should we walk to the good spots on the riverwalk? Mad Dogs British Pub Riverwalk?

Or Uber?

Unfortunately we have 7 adults and 2 kids with us, so we would need multiple Ubers/Taxi's.

You're just north of the main tourist part of the Riverwalk, which is what everyone is talking about. It's maybe a half a mile walk to these attractions. About a mile and a half walk to Southtown and a bit over two miles to the Pearl. Does the river taxi go all the way down to the hotel they are at? I've never taken one but see them when I run down there all the time. It's a nice way to see the whole Riverwalk. You could use ride share for these trips, that would be fine. If you have kids I would recommend looking into a few other places on the riverwalk, Mad Dogs is a pretty rowdy bar and I'm not even sure if you can get in under the age of 21. Do a bit of googling to find out more of what the city has to offer.

Actually the OP is south of the main Riverwalk loop and is not even 1/2 mile from King William/Southtown.

Walk OP. I walk with my young children from Southtown into downtown and even to the Pearl.

Simple Google searches are full of what you're looking for OP. A specific question, like kid friendly bars will yield varying results.

The riverwalk along Alamo Street is the busiest, I think.

Whoops. You're right. I got turned around. But I agree walking is a good option.
