Rio Mambo has spinach enchiladas. Stone Oak & 1604. I wouldn't say it's a hole in the wall though. Very cool on the inside and excellent food always.

I want to throw in a vote for Mexican Manhatten on the Riverwalk. It's away from all the noisy, crowded areas but still close enough to all the action. It's actually close to the new Courthouse Square. Their outdoor patio is up high looking over the river so you don't have all the crowds walking through while you are dining. And the margaritas are top notch, too.

Their margaritas are great, but their food is just this side of bland for my taste.

Martha's Mexican Huebner and Babcock for everything or other location 410 and Broadway (make sure you get a praline) , Panchitos for Puffy Tacos, Jacala for mexican plate, Blanco Cafe for enchiladas and Fina's kitchen (Hildebrand and Blanco) for combination plate, tortillas, chips and salsa.
