Hi,
Anywhere north from San antonio is not going to give you 50+ degrees weather year round. Matter of fact, tonight, hill country is going to see temps in the 30s. Kerrville had heckuva snow storm last year (or was it 2 years ago?).

For warm, affordable, and land that is green, you'll want to check out the areas SOUTH of San Antonio. This is more farm-land type rather than the wooded and hilly areas that make up the region North of San Antonio. Right now, it's quite brown north of SA because of lack of rain.

Stay away from the Texas Hill Country (N/NE/NW of San Antonio) as you'll be starting at $200,000 for any land more than 15-20 acres. If you CAN afford it, then it's absolutely worth it in terms of the investment and rural lifestyle you may seek.

Ethnicity is more diverse south San Antonio, however, hispanics and african-americans are beginning to make strong inroads into the hill country, as well. The hill country is very heavily republican.

Personally, I would stay away from Canyon Lake and any area near I35 because traffic is horrible and population is increasing there like crazy.

Medina area (Castorville) more than Canyon Lake, maybe south of SA would be a cheaper area...Floresville, Devine, etc...

The acres you're looking for are called ranchettes. Medina and Canyon lakes are more for recreational use with smaller acreage (5 or less). I suggest you go out on Hwy 16 past Bandera toward Kerville or up Hwy 281 toward Johnson City. These appear to be better areas for grazing.

Steel Man, what's wrong with south San Antonio? I think the best areas for grazing are south San Antonio...more level land and grass. Heck, if you can stand the humidity once in a while, might as well move to Kingsville and like...miles and miles of flat open land. The King Ranch is there

Absolutely nothing. Actually, the land south of San Antonio is a lot better for grass and other crops. However, the OP asked for areas around Medina and Canyon lakes.

BTW: If I had my druthers, I would opt for the Hill Country near a river.
