We had that happen behind our last house - the deer couldn't have been there more than a day or two, but when we saw it it was half gone. Another day or so, and it was all bones except for the head!

My bet's on deer remains, or maybe a stray dog. I doubt anyone could have dropped a body in such a busy park...
