I heard that Las Canarias at the La Mansion has a good brunch. There is also a good one at the Hill Country Hyatt but I'm don't know the name of the restaurant there.

A friend of mine always raves about Magnolia Pancake House. I believe it is located in the Embassay Oaks area, though I have never personally been.

I have always enjoyed Marie Callenders on 410 they have a great Sunday brunch.

Las Canarias & Cappy's on the higher-price point.
I love Liberty Bar's brunch, too, and it's a bargain.
Biga will do their brunch every once in a while, normally for Easter, Mother's Day, etc. It was, without question, the best in town.
