The Cove is good - not entirely Vegetarian though, just has good options.

Not near NB though - near downtown.

Green is cool, but has become a little too greasy/fried for my tastes.
Close to New Braunfels I can only think of La Fiesta Patio Cafe on Pat Booker in Universal City.
They will work with you on a lot of the dishes. They also serve brown rice and put no pork in their beans.
You can also google the San Antonio Vegetarian Society.
Their site is a little dated, but there's still some good leads there.

Thanks. We just moved here a few months ago from Los Angeles, California, and it's alot of health food and vegetarian/vegan stuff out there.

Besides some mentioned already some of my favorites in San Antonio are:
PF Changs at the Quarry-They will put the yummy 5 spice tofu in any dish.
La hacienda de los barrios -1604/Redland. I order the puffy tacos guacamole style. The beans are vegetarian friendly.
Red Robin- Gardenburger & Boca Burger on their menu, made any style.
Pompeii Italian grill-16109 Nacogdoches

thanks, but please be very careful about PF Changs and their little sister Pei Wei - most of their sauces are NOT vegetarian but chicken or beef based.

you need to order the lo mein (for example) with VEGETARIAN sauce - not just "with tofu".

Little Aussie Bakery in San Antonio is 100% Gluten Free (there's a restaurant in the bakery) but they're totally not vegan. They even serve lamb.

But what does vegan have to do with Gluten free?
