Ground meat? That sounds more like kofte to me than a gyro. I thought everyone knew that gyros and sliced off a hunk of roasted heaven. The ones I've had at Demos were sliced, not ground meat.

Traditional gyros should be made from marinated, thin sliced pork meat staked on a skewer and build up like a cone. The cone will be placed vertically in a electric rotisserie and when the outside part of meat is grilled, it will be cut off with an electric knife.
Those thin, big slices of GROUND PROCESSED meat you see at Demos not even resemble the way the traditional gyros supposed to look.
We already talked about "looks like", "taste like" and "wanna be" ethnic food and I am not going to elaborate it.
My question is : if anyone knows why ground meat is used to make the gyros? Is that some kind of local regulation or cook preference? I had gyros at John the Greek, both Demo's locations, and Mina & Dimi's - all serve ground processed meat.
In Houston I had the traditional version.

Last night we ate at Thai Pikul - wonderful, as always.
Today we ate at Wing Stop - also wonderful.

Chain Haters Move Along Please........nothing to see here.
I ate at (gasp!) the big OG tonight.....and it was really good. I had the Chicken Marsala....weird that it came with mashed potatoes, but they were good and the chicken was extremely good. I love their salad....they got the salad/salad dressing ratio perfect tonight (I've had it where it's just drenched and it's too much)......breadsticks were boring, but hot and fresh. My friend had a shrimp/pasta dish and she loved it. There were several very large shrimp in her bowl and a pile of angel hair pasta. We shared an order of zeppoli for dessert and they were a nice finish. We actually had to wait 45 minutes for a table, because as you know, everyone hates those chains.
Our waiter was adorable as only an 18 year old boy who was raised properly can be and perfectly attentive.

Ya know what I just LOVE there? The shrimp and asparagus risotto!! So good! I love OG!

My last experience in this place was not impressive -
my Pho did look good and the veggies were fresh. The problem was the very fatty slices of meat. At least 50-50 ratio. And the watery broth. Absolutely tasteless, like they poured plain hot water over the rice noodle, added raw very thin sliced meat, few rings of onion, scallions and cilantro leaves for garnish.
So, just to make sure that my taste buds are still functioning properly I ventured there this evening again.
And again the Pho I was looking at was desirable. But the problem was the same: bland broth the color and taste of clear water.
I understand that for individual preference they set up a variety of sauces and seasonings on each table. But my Pho should have a taste of broth and a light brownish-golden color. The extra seasoning, if any, should only add the final touch.
The meat was less fatty, though, but the tendon was hard and rubbery.

sapphire: the salad at OG is always crunchy fresh and plentiful. My favorite grilled salmon and shrimps are consistently good. They improved a lot since my only so-so experiences in the 90's

I went to Massey's Restaurant on 8th Avenue in Ft Worth last night with friends. Great food! The chicken-fried steak is excellent, and so is the 'all you can eat' catfish on Wednesdays and Fridays.

It IS nice....and the croutons, yummy. I got my fix, though......I honestly only go about once a year. In fact, the last time I went was with my homies from city-data.........girls' night out. Good times.
