Phase II of The Shops at Cantera. An additional 300,000 square feet. There will be a 12 screen AMC theater, book store, gourmet grocery store, restaurants, class A office and other retail stores.
The Rim has the Sanitkos Palladium 21 screen theater.

As far as AMC goes... Pppsssshs. I'll stick with Alamo Draft house!! Great food (you can eat while you watch), Great prices (on the food and even free events, like Sport events/screenings, weird Wednesday etc.), Great beer and wines (you can drink while you watch).... Can't beet it!
Try their fried pickles!

No really it works….. They have taken out every other row of seats and replaced with a narrow bar/table…This also makes it like stadium seating, because the row in front of you is now two rows away and lower. You get there a little bit early (don't have to but it's nice, as they have some pretty good things playing on the screens) like 15 0r 30 minutes… not much more than a regular theater. Once in your seat there is a menu, a pencil and some paper on the bar in front of you. Write down what you want stick it up in the little holder thing, the waitress comes by and grabs it…. And Bam before the preview are over you've got your snacks/burgers/beer/pizza/salad etc. etc. (and you didn't have to wait in a line at the concession stand behind some indecisive change counting teen and his date)… About 30 minutes before the shows over they come by for last call (real sneak and low, does not interfere with the show), bring back your check and BANG your cashed out and on your way by the time the credits are rolling and the house lights are coming up….
Never had a bad experience there! Never….. They've got a lounge out front if you’re a slow drinker or want to hang before or after the film. They've even got this huge re-sealable stein/bottle/thing they call the "growler". Buy it once for twenty bucks, they fill it with beer and because it seals you can take your left over home. Bring it back and they fill it for the price of a pitcher (take home the left over) because it seals actually stays fresh for a couple days. Bring it back….. See the trend here.. Growler is way worth it because they've got some really cool specialty beers that you just can't find so…...

oops!
Please excuse my "otherhalf", longhornguy - he thought you meant "where is there room for..." in regards to the Alamo Drafthouse, instead of where is there room for Phase II of La Cantera. (Or is it me that misunderstood your question? )

Altough I've had better experiences at the Austin locations my choice of theater would be the Alamo Draft house as well. There is no theater in town where you can go and the majority of patrons in the builiding is at least 18 years or older.
