Yeah, I have heard good things about Granzin's. But the best creamed corn, hands down, that I've ever had, is at Bolner's. Looks a mess, but oh my Lord it's fantastic. Same with their meat.....looks dry and gross, but it's really good.

But since you asked, just off the top of my head I'd say Bohanan's in San Antonio is superior to Ruth's Chris. My point was that no matter how good a chain is, it is still a chain and somewhat constrained by the need to hire lots and lots of staff and delegate to hired managers. A chain is never going to match a sole proprietor restaurant that is owned and operated by a master who has made it his life's work to put the very best food on the table.
OK, Bohanan's is next on my list. But honestly, Ruth's Chris is only a really small, small chain type operation. It shouldn't be compared with the national type steakhouses.....

My wife loves Granzins, but I'm not sure they carry what would be considered top quality "restaurant" meat such as choice. Maybe wrong about that.

And to add, I'm at the point in my life where I don't shop at Culebra Meat Market.

Ruth's Chris is a public company listed on NASDAQ with over 400 million in sales from over 120 locations in the US and 8 overseas countries. According to Wikipedia they have over 6,000 employees.

If that's not a national chain then you tell me what is.

Now back to the original point. Rudy's is a much smaller chain than Ruth's Chris but Rudy's still has 20 locations in 3 states. When you get that big you just have to depend on too much delegation to low wage employees. There's really no way that a chain that size can compare to one guy who has made it is life's mission to reach perfection in BBQ or steaks or whatever.

And I still say that for the San Antonio area, if you want brisket, go to Barbecue Station on Harry Wurzbach. And if a place can't figure out how to do brisket, then the rest don't matter. IMHO

Coopers rocks! I stop at the new braunflels location every time I drive down from Dallas. I used to go to the original in llano everyonce in a while when I worked in kingsland. At least San Antonio has decent BBQ options, Dallas BBQ is satisfactory at its best and barely edible at its normal.
