My husband, our 10 month old son and I are considering relocating to SD. We are looking for a family friendly neighborhood.

We prefer to be a bit inland with a somewhat hilly area, with good schools and upper middle families with good values. We are not fond of track homes and ideally would like bigger lots.

We are very liberal and want to meet normal, down to earth families.

South Escondido overlooking Lake Hodges is nice but borders questionable areas north of the lake.

What about San Marcos? Vista?

Probably Rancho Bernardo/Poway/Penasquitos area.

If you want bigger lots, then maybe Santee, although I think the school in the first sentence are considered higher.

Have you looked at Olivenhain? It's a community in the city of Encinitas, just west of Rancho Santa Fe, and seems to fit a lot of the criteria you've named.
FYI, "very liberal" and San Marcos, Poway, Rancho Penasquitos, Vista, or Santee would be very interesting.
