Aqui es Texcoco has some great southern style Mexican dishes with unusual sauces and ingredients. Mariscos German is great for fish tacos and seafood tostadas and the like while Mama Testa's is just good all around.

In North County, Juanitas in Encinitas on HWY 101 and Mr Taco in San Marcos (two locations and both are great).

Los Reyes on 25th and Broadway has AWESOME Tacos.
La Playita in PB used to be good, but it closed down a couple years ago.

There's this place off of the 15 in RB (I think on Bernardo Center Dr.) that's just labeled "Taco Shop". Not sure if it's part of a chain or not but I thought it was good.

+1 on this! Including his sociability. :-) And anything I've tried so far has been good. My only complaint is that the beef inside his rolled tacos gets overcooked by being fried in the rolled tortillas. Chewy. Still tastes good, though.
Many restaurants share the Mi Ranchita name. But they're all independently owned and run. (The owner of the Mi Ranchita in Ramona explained it to us.)

i vote for IL INDIO they have the freshest Tortilla which, they make themselves and freshest and tastiest ingredient used in all sides. above all, for chicken, they only use prime chicken breast not the dark meat non-sense. I went to a place in La Jolla shores, after paying $17 for 2 Burritos, i was disgusted by the trash of fat and dark meat of their chicken use, i felt ripped off. definitely recommend IL Indio for Taco and Burrito
