Soapstone makes a fine countertop, but because it's so soft, you'll have to get used to the old-world funky look. Same with marble, but marble will etch from orange juice or spilled margaritas; soapstone will not.
Soapstone won't really take a sealer, but many folks prefer its look when oiled or oiled/waxed.

I would probably send my templates to a friend in Nebraska who would ship tops for me to install as he has done in the past.

There are many reputable fabricators in the area. You must check out their reputation and references. This cannot be overemphasized. They won't be low bidder.

There is hyper-competition among fabricators, which is why I got out of that business. You've got to weed through a boatload of price shoppers to get to the customers that understand value. You'll pay a good fabricator, or you'll pay me to fix it after he's gone out of business. It happens all the time.

I'd check HomeAdvisor.com | Get Matched to Top-Rated Remodelers, Plumbers and More for fabricators. It costs you nothing, and you can read customer reviews of potential fabricators. I've earned a 4.68 rating out of a possible 5 there.

We went to The Granite Place in Sarasota on Rt 301 when looking for granite for bathroom remodel--
nice guy, low-key, showed us around--they had quartz there

might call DalTile as well--they sell slabs as well as tile
