hi, i used to live in sarasota and loved marias chicken and the yuca fries with the fantastic sauce!!!! does anybody have a recipe for the sauce or know if the chicken is a traditional recipe from somewhere. i live in denver now and am trying to find something like it...thanks

I don't know if you've ever had portabella mushroom fries, but they are really good. You can slice them in strips, just a little bigger than fries, batter 'em with a light beer batter and fry 'em up. They are really good and different. Also, with just about anything, you can modify some ranch dressing (a good base dip), sour cream, or thousand island dressing with some spices like cajun, barbeque rub, jerk, or a thousand other spices/seasonings, and alter the taste uniquely and significantly and people will think you're a "good cooker" like my girls think I am. Oh, and a tad of vinegar (there is a lot of variations to choose from as well) always adds to enhance the taste of fried foods.

I'm so bummed that Maria's closed. The sauce is called "Ahi" and I think everything was Peruvian-influenced.
