Nowadays, many universities/colleges offer google apps (gmail, drive, etc) for their students. Those accounts come with EDU domain, but it is not different from gmail.

I am curious, for those EDU accounts offered by schools, do the school IT folks have permission to access your files on the google drive? Or only google can access your files?

Anyone knows?

Not sure. I have a GSuite setup for my domain and cannot see other people's stuff.
