Well, yeah...the sticks and Sun method is for pathfinding when lost, not for an accurate land survey.

With your method, the issue is determine exactly when local noon happens; you need to know it so that you can take markings at 15 minutes before noon and 15 minutes after noon. Can't rely on your watch, it's most likely set to standard time or daylight saving time. You could look up your local offset from a table and adjust accordingly...but then you probably already know your location and which direction is north. And you'd still need your watch.

Sticks and observations could still be used to find local noon and thus true geographic North...but it would take some time to determine...days even, if you need a really accurate measurement.

ASTRONOMY is a science. ASTROLOGY is basically closer to a religion that uses astronomical data (often incorrectly since it does not account for the Earth's wobble on its axis) to make it sound closer to pseudoscience. I have friends that enjoy it and have fun with it and, if you are, knock yourself out! I don't care. But please use the correct terms.
