Any recommendations for good take out salads in Bellevue (preferably around Factoria) or on Mercer Island?

Yup. And they recently added more express checkouts for the lunch rush. The only thing I dislike about it is the traffic patterns sometimes makes it impossible to get back on 405 South.

In the Bel Square area there are restaurants like Earl's on the street from Lincoln Square where they do a nice Wedge salad:http://www.earls.ca/images/menus/Earls%20US%20Menu.pdf

Or California Pizza Kitchen where they have an assortment of salads (I like the Thai Crunch) Salads | California Pizza Kitchen
