Moderator cut: see note

Anyone ever ordered SHIRATAKI noodles (yam or root noodle) in a Japanese (or any Asian) restaurant in Seattle? Any recommendations for a great restaurant in Seattle that serves these noodles in either a stir-fry or soup? International district recommendations?

I love Shiratiki noodles. Noodles without carbs! But I've never seen them in a restaurant of any kind.

Are you looking for the already made or would you be willing to purchase your own and make them? Central Market in Shoreline sells them.

I have experimented with them and can buy them at QFC. I found them to be chewy, similar to the texture/feel of squid, and thus not very palatable. Just hoping to eat a professional dish with these noodles to see if I'm missing anything. Perhaps they need to be prepared a certain way or married with specific flavors? Would like to taste a dish that successfully uses these noodles.

Took some research, but Samurai Noodle gives you the option of Ramen with konnyaku, which is shiratiki!
International District, Broadway, and the U District

I get them off Amazon, and I rinse really, really well under cold water. Then I boil them in pho broth (from Than Bros) for ~20-30 minutes. They're still pretty firm, but not squeaky and they've absorbed a bit of flavor. I also cut them up with a few snicks of a kitchen shears while they're draining after rinsing - since normal noodles will break as you eat them, but these don't. They still work great with chopsticks though.

Thanks Ira! I'm with WestSeattleGal - always wanted to try someone else's rendition of them. Preferably someone who makes a living cooking noodle dishes.
