Having discussed this with some of our tenants (I'm in commercial real estate) the cook shortage is real, and not related to the minimum wage. Some of the long term employees are leaving for several reasons:

1. They can't afford the rent any more
2. There are many new restaurants opening up and they are leaving to work at the newest place, even for the same pay because of all the shiny new equipment
3. They leave to take advantage of the great economy to open their own restaurants

I liked Louisa's the one time I went. She's talking about how prices will have to go up; well, I remember it being pretty pricey before.

"Great economy"? Wow, Seattle residents are indeed fortunate. There are parts of the US that are still depressed economically, and jobs-wise.

I am sure hundreds of mom and pop shops will be closing in 2017. We will see this time next year. Now there are 20 more people probably going on public assistance.

Must not live here. Seattle's unemployment rate below 4%.

Seattle area unemployment rate falls below 4%, propelled by a strong tech economy - GeekWire

I just found out my favorite teahouse: Kwan Yin Teahouse in Wallingford, closed earlier this year, due to a huge rent hike. By the time the owners decided they wanted to hang onto it and would try to make a go of it at the new rent, someone else had snatched it up. That's really too bad. That was a beloved place, too.

Places don't stay vacant for long even in tiny Woodinville. We had a building vacated downtown that has quickly been replaced by a Tipsy Cow with delicious burgers and even a salmon fillet (because of course!). http://www.tipsycowburgerbar.com/eat/

Woodinville doesn't have Seattle's wages or "hourly rules" laws. It's also a high-income area and even gets a bit of tourism as a wine center. Filling its storefronts doesn't sound hard.

We finally ate at the one in Redmond, after the long lines out the door diminished. I had the one with a fried egg on top. Really good, but not worth a long wait in the cold.
