I don't know about "best" but a must-go, classic diner.
Lil' Jon's in Bellevue
Lil' Jon's - Bellevue, WA 98007
Seattle hipster, must go, diner...
Hurricane Cafe
Hurricane Cafe - Seattle, WA, 98121 - Citysearch
I've been to both and recommend both.

I'll second the recommendation on Lil Jon's...they don't make places like that anymore.
The Hurricane? Fun for people watching and atmosphere...The food? Well, you don't really go there for the food. Portions are large, prices are low, but it's nothing anyone would call "gourmet" or maybe even "good".

What makes em green is basil pesto. The green eggs with ham at the Hi Spot is eggs, ham, pesto, and mozzarella. Yum! The place is great, but can get very crowded.

The funny thing is that this place is literally 5 minutes from home, hubby even passes it daily to go to the parking garage. We are going back for dinner tonight..thats how much we liked it! Thanks for suggesting it!!!!!!!!!

I thought the food at Hurricane was better than Lil Jon's, but we went to Hurricane at like 1am, and Lil Jon's on a weekend day and had terrible service and bland food.
