My current fave is Roxy's Diner in Fremont on N 36th Street. Also Voula's Offshore Cafe between the U district and Wallingford, roughly under I-5.

Chace's Pancake Corral on Bellevue Way south of downtown. Not fancy, but it's been there for 50 years or more and never fails to draw a crowd.

I love the Hi-Spot in Madrona. Gotta try the green eggs and ham. It is out of this world, and when its nice outside you can enjoy their outdoor patio. Nothing fancy, just a nice neighborhood place for breakfast. Also I love the Coastal Kitchen on 15th on Capitol Hill.

We used to live in Seattle (trying to move back from Atlanta) and visit often. We always go to this breakfast (and lunch) place once or twice while we are in town. We learned about it in 1993 and have raved about it ever since!
It is on Eastside near Woodinville.....The Maltby Cafe.....it is...Un....Believeable!!!! On the weekend you have to get there early because there will be a wait. I believe that you can make reservations if you have 6 or more people.
The Maltby Cafe - be sure to read the "info" page as it give their background and how it started. They are consistently on or near the top of many "Best Of" lists in the Seattle area.
