I'm from NYC. Ever been to Staten Island? As closed-minded as it gets north of the Mason-Dixon line. While NYC, Chicago and LA are fairly open-minded, Seattle (and SF, Portland, too) has led on so many issues that those cities are still discussing/debating and/or came to much later, after Seattle did. Legal weed, soda taxation, banning trans-fats, plastic bags and styrofoam, curbside composting, etc. Being a city with more black or latino citizens doesn't make a place more progressive. If it did, what about Seattle's huge Asian and large East-African populations?

Eat it almost every day for Lunch, its quick to go and relatively healthy compared to the Junk fast food places that abound where its less diverse. I never plan to live in a city where its all white people. The food choices would suck.
It's getting better. Tacos Chukis is one shining example of good Mexican food here. Señor Moose is a long-time classic that's an unknown great.
