For me, Zoka's Coffee in Green Lake. There's also this granola-eating, ultra leftist establishment on 85th St. near the Golden Gardens park which has excellent bean. Cafe Fiore, I believe it's called.

There is no ultra leftist anything in Seattle because there are hundreds of thousands of soldiers in Iraq and Afghanistan doing absolutely nothing for Americans. And "leftist" sit quiet like everyone else. There are no "ultra" leftist in Seattle. Period.

You can buy direct from Fonte, in Georgetown, as I do. And they give it to you within hours after it was roasted. Roasted beans should be consumed within 30 days, the flavor is best immediately after roasting. I have a grinder and use French press, always fresh roast beans. Fonte seems to be the best around. Caffe Vitta seems over rated to me but they are probably just as good as the best. The Tully's on Airport Way has whole bean coffee that's also excellent, you can get it straight from the roaster there.
But Fonte and Caffe Vitta, and all other "micro roasters" in Seattle use gas-powered roasters. The best coffee is roasted with firewood.
One would think that in Seattle, as we have plenty of firewood around, someone would offer a wood-roasted coffee bean. Does anyone know of such roaster?

I forgot about Fonte. They are excellent. I roast coffee at home using an automatic bread maker and a heat gun. A wood fired roaster sounds like fun, but the city might put them out of business for polluting the atmosphere

The best brewed coffee I've found on a consistent basis is from the Online Coffee Company. It's a local chain with 3 shops that I know of (2 on Capitol Hill and 1 in downtown on First Avenue). I usually only drink drip coffee, but for lattés, I like Caffé D'Arte in downtown (2nd Ave., I think), and Vivace, on Broadway. Café Ladro is pretty good, too. Really, It's hard to go wrong in Seattle. It's like looking for a good slice of Pizza in NYC.

I like Ladro and Zokas too. For beans for home, I like Stumptown Hairbender, which is sort of their sweeter blend.
Actually, I'm looking for a place that gives you regular coffee in a french press with a little timer. Does anyone know of one?
