Me and my girlfriend just got back from Panama where we developed quite the affinity for ceviche! Anyone know where we can find some good stuff near Downtown? What kind of seafood do we use up here in ceviche?

Hmm... I think there's one place off of Pioneer Sq... but I don't know if its still there or not, LOL but it's called "Bokas".

But if in doubt and desperation, hop on the train and go to Portland... they got stands!

Are you willing to cook? I don't know anything about ceviche in Panama, but I've eaten it all over Mexico, and haven't really found anything comparable here, so we learned to make our own. It's actually pretty easy to make, and if you have a trustworthy fish monger who will sell you really, really fresh seafood, you can "cook" it in the lime juice (very often we cook the seafood anyway, at least partially). We do the following: Use halibut (or bass or other white flaky fish) scallops and shrimp. Chop into equal sizes and add lime juice. Let sit (in the fridge) for an hour. Chop up ripe tomatoes, some onion, cilantro, jalapenos, avocado and mix. Add sea salt and lime juice. Stir and add seafood. Marinate for half hour or so. (Sorry, I'm not really a cook that measures anything! Just to do taste - took us a few versions to get it perfect for us.) Serve with tequila and sangrita on a white sandy beach under a palapa. Or at home, it's delicious there, too.

I know some versions use ketchup or tomato paste/sauce, but I like the beachy version that you find on the Mexican coasts.
