Hiding underground...
All anyone has to do is find you once, follow you back to your rabbit-hole, and plow or shovel dirt down it. Like chasing a gopher, they could cover your airholes too. Or they could drop smoke or teargas or anything else down. Once you either come out or suffocate, your supplies are theirs... especially if you are unarmed. Moreover, earthquakes, floods, or any natural occurrence can destroy the integrity of your bunker, flood you out, cause a collapse, etc. Once you are underground you have no escape. Plus, few people think about a simple thing - disposal of waste. A bucket might work for a little while, even a composting toilet - but they have their limitations, especially if you have more than one person. Emanating odors will attract a lot of undesirables to your cavestep, and the heat and miasma of decomposing waste in a confined area is not pleasant.
Most folks who talk about what they "could do, if" don't have anything in place, have neither the equipment nor land that they fantasize about, nor the wherewithal, experience, or ability to create or produce it, and only think of it as an entertaining mental exercise in the happy realm of fantasy.
But I support everyone's right to insist on being an unprepared, overwhelmed victim. As long as they don't show up on my doorstep, because then my reality will intrude - and finish off theirs.
