I have four chickens, three hens and a rooster. They lay few eggs during the short days. I buy eggs during this time. Cage-free, the only kind I buy, are 4.05 per dozen; whole milk is currently 2.29 per gallon. These prices are at my local Super Wal-Mart.

I have preserved eggs from my hens for winter but not by freezing. I do it the way folks did it in the old days. Here's an interesting video of both the right way and some wrong ways. There's a large selection of further material on Youtube about preserving eggs. Just search for ''preserving eggs.'' If you don't raise chickens you should be able to make arrangement with a small eggery to get clean unwashed eggs. Watch the video to find out why you'll want unwashed eggs.

Take a look at their other video productions as well. They have many on historic food preparation methods. They have a website and a great printed catalog as well.

Please buy only cage-free eggs.
