A lot of stores are offering gift cards when you make a purchase. For example, Target is giving away gift cards up to $100 when you buy an iPad Air. Could I theoretically buy the iPad, then return it and have the gift card to use later? Seems like they'd prevent that but maybe not?

Their return policy clearly states
"However, the amount of the refund will be reduced by the prorated value of the free merchandise/gift card."

Yes, you'll be able to return the iPad. They'll just deduct $100 from the purchase price. It will show on the receipt how much you paid and how much you'll get back if you return it.

But they won't just refund the non sale price. Without a receipt, the OP will still probably get $100 less, if not a lower price.
