A Breville ice cream maker was one of my Christmas presents from me to me. I had some amazing coconut lime ice cream at a cooking class and decided I couldn't live without an ice cream maker. With this machine, I don't have to keep the bucket in the freezer and I've always been happy with Breville's quality. I just need to find time to use it.

I also got the pasta maker attachments for my kitchenaid mixer.

Actually, enjoying reading the thread.
We just moved (downsized) and the kitchen is going to be very re-vamped. Debating about new everything or mostly everything. (cabinets are debatable, counter tops are happening- as well as sink, faucet, hardware, and absolutely dishwasher). The electric range is about 20 ish years old, and amazingly it works really well. It does not have some features I would prefer, but the thing cooks and bakes properly! The fridge is about 4 or 5 years old, and functioning properly as well though I hear the newer ones tend to die before 8 years so i won't be surprised if it starts dying on us soon and I will be fine to replace it.
As far as gadgets go, I am not really into them. Oh I just remembered, our electric can opener is crapping out and DH is in the market for a new one. For me, I prefer the manual ones.

I never fry anything and haven’t for years. I’m thinking an air fryer would be a way to change our menu a bit.

In the last year or so I bought 2 instant pots, a sous vide, an air fryer and an induction cooktop. I think I'm totally done with gadgets! I would really like some new appliances, but the ones we have aren't old enough to justify replacing. I'm kind of hoping the garage fridge goes out and then I can move the current kitchen one there and buy a new one with a new range to follow. Waiting for Whirlpool to come out with an induction range in black stainless.

Something I'd like to get for my tiny apartment kitchen, is some cupboard organizers to use the space more efficiently, like the pull-outs for pots and pans, so I don't have to practically get on the floor to get stuff out of the bottom cupboards. It would be so nice to be able to just pull out a drawer thing and have easy access to everything, like these:

I think I'll buy an air fryer, even though some of them look like space hogs. Mainebrokerman (sp?) has me sold on it! haha If I don't like it, I think I could find someone to pass it along to.

We need a new dining table to go with the flooring we just had installed. We also need better lighting in the kitchen. I think that's it.

I learned I do not want an air fryer - my neighbor was trying hers out and said she was air frying chicken.... I'd rather have baked or whatever, not the loose breading that was on this piece of chicken. I'll save my money. As for something I would like: more cabinet space... but that's not going to happen.

If anyone is remodeling: do get the pull out drawers!
