I would guess by planting grapes. Which might have a few more steps than what I am letting on to.

I'm going to tour several vinyards, in Spink County, before I make any desicions.
First step is soil testing, here.

Debey, have you been over to the one close to Sx. Falls? They advertise it on tv and I think it'd be cool to go there. You get free samples, too.

There is another vineyard just west of Brookings, north of US-14. One is being established north of Pierre. Talking with the owners its a lot of work. I can't recall what all they were doing.
