I am visiting end of May & wanted to create a checklist of things to see and do while I am there. For instance what is cool restaurants locals love over here? is there any hidden gems travel guides don't speak about?

That as well as the things to do. I enjoy the outdoors and hiking and welcome suggestions for things within a few hours drive that are worthwhile.

Not sure what the virus rules will be when you visit, but Spokane is now Phase 3. These are all places we have enjoyed before.

Manito Park is very nice to walk around.
Ton of breweries, No-Li has a cool outdoor beer garden right on the river.
Close to there is Upriver Dr that winds along the river. Minnehaha has hiking and rock climbing. Continue on and you can end up at Arbor Crest Winery on top of hill with view of the area.
Downtown is Riverfront Park. The river runs through with some falls. A unique place to eat would be Steam Plant.

Also take a walk through the Davenport Hotel downtown, maybe go to Kendall Yards on the north side of the river - good pizza place, Nectar wine & beer with a patio or Maryhill Winery's patio overlooking the river. It's a beautiful time of year to visit.

Anthony’s is a great place to eat and it has a gorgeous view of the falls.

I would recommend checking out High Drive in the Western part of South Hill, I love the view of the hills facing west, it is an amazing sight, for restaurants I totally recommend Tomato Street (Italian restaurant) on Division just south of Francis.

The south hill is beautiful. A mix of modest and expensive homes. Some very historic, some modern. This makes the area somewhat unique.

Was about to suggest High Drive.

Also in Spokane:

- In Riverfront Park there's a giant wireframe dome where the World's Fair was once hosted. (Smallest city to ever host it)

- Rose garden in Manito Park

- Northwest Museum of Arts and Culture

Possible excursions:

- Frenchman Coulee trail overlooking the Columbia River Gorge, 2 hrs west. Breathtaking views

- If you like college towns, Pullman WA (WSU) and Moscow ID (U of ID) are 1.5 hrs south. Very different geography around there from Spokane. Apparently the Saint Joe National Forest is on the way --- I've never been there but it looks really pretty
