Since you're coming to Springfield on a Sunday, your night life is going to be severely limited. I think the best place for you to get unique shopping, restaurants and night life is the downtown area. I'm not sure how many of the shops and restaurants close on Sunday, since I don't normally spend time downtown on Sundays. If at all possible, spend a Saturday night downtown instead.

You didn't mention what you like in the nightlife scene. There are some clubs downtown, if that's your thing. Otherwise, I would suggest going to Ernie Biggs piano bar. The place is always packed and has a lot of energy.

I don't think anyone mentioned Bass Pro Shop. It is a fun place to walk through. It has a nice restaurant upstairs. It has indoor aquariums with big fish and turtles. There is a running stream with live ducks by the path up to the restaurant. They hold different workshops and events throughout the year.

I've been to a couple of Bass Pro Shops, so it would good to visit the 'original'.

Right now they are going through some renovation but its still nice.

I bet the Conservation Nature Center (center?) is very pretty right now. My wife and I really enjoyed a stroll through there a couple of weeks ago.
