My wife and I purchased a home in St. George last summer. We love the area even though we haven't completely moved in. Let's just say we are transitioning.

My daughter was enrolled in the charter school in Ivins for 2/3 of the school year this year. We are not Southern UT natives and she had a really hard time making friends there. Not sure if that is related or not, but it is what it is. She is now in a different school and she loves it. Much better than Vista.
I have been told that Bloomington has the best schools in the area, but that's just word of mouth. I like the Ivins area, it's mostly very new and it's proximity to Snow Canyon is great. We live at the opposite side of STG though (Washington), and while I like it here, it's too far out for me-- and we aren't planning to stay in STG long-term anyway.
