BobsGL1800 has it about right. We lived in Mesquite at one time and it took us well over an hour to get to Vegas even though it's 80-85 miles. Yes, we were going 90 mph in certain places but once you start dropping into the valley, you get slowed down quite a bit and that will take quite a hit on your average speed.

Additionally, good luck going 80-90 mph in the "Gorge" (Virgin River Gorge) between St. George and Mesquite (Arizona portion of I-15). Not only have they been doing construction for what seems like the last 15-years in the Gorge, but even if not, it's very curvy with lots of slow moving semis so you definitely aren't going to be averaging 85 mph between St. George and Mesquite.

Our typical trip from St. George to Mesquite was about 40-45 minutes (depending on where in St. George) and Mesquite to Vegas was about 1:15 (at least ...depending where in Vegas) so I still say to allow for about 2-hours from St. George to Vegas. I don't think you could make it in an hour even at midnight unless you are going substantially over the speed limit ...100ish +.
