My wife and I lived around St. George, but it was 10 years ago. I'm wondering if things have changed since then...The Mormon church was so dominant then. It did feel a bit like "us" (non-Mormons) vs. "them" (Mormons).
My wife got annoyed when she was asked in job interviews if she was Mormon. And once she was told specifically that they only hired Mormons. Yeah, it wasn't legal to do that, but who would you complain to? Everyone in the legal system was Mormon.
I found the women to be a lot tougher on other women than men being tough on men if they weren't Mormon. But winning construction projects for my boss (non-Mormon) was tough and there was some suspicious activity with bids. I wouldn't have wanted to be a non-Mormon business owner.
I had an accident where I was going straight through an intersection. Another vehicle turned left in front of me as the light turned yellow. We hit; I was somehow deemed 85% at fault (as far as I know, the car turning left has to yield). I vowed that I wouldn't stay in Utah after that.
Mormon kids could be tough on non-Mormon kids, starting around middle school it seemed. There were various other incidents that my family, friends, and co-workers experienced, mostly minor but irritating. I guess you just deal with it or leave. We left.
All this being said, I loved the area for its natural beauty. I loved living in Central, at 5300 ft elevation, so we got some snow and it was cooler than St. George. I just hope things have changed in the last decade. At least now they have an In-n-Out Burger. lol
