Cornell University employs several thousand (even in Geneva: Cornell University's New York State Agricultural Experiment Station ) and the other colleges and universities in the area are major employers, in addition to local school districts, county governments (Cortland County had 600+ employees when I worked there 15 years ago), hospital/medical complexes.

Among industries ITT Goulds Pumps in Seneca Falls and Auburn is a big employer, as is Morse/Borg-Warner in Ithaca, and Pall Corp. in Cortland. The Cargill salt mine in Lansing is a large employer that might not come quickly to mind as it's on a dead-end road and underground.

I think some might be Cornell University, ITT Pumps, Hillside Children's Center, Ithaca College, TRW, Bombadier, Corning Inc., Cadbury and Goodrich, among some others.
