It sounds like your husband really likes the rural feel so let me give you a recommendation. Try and find a rental South of the city along 81. Common town names to look for are Lafayette, Tully, Pompey. This area can be considered suburbia because its so close to the city and has a fairly easy commute into Syracuse however, it really has remained rural and has resisted over-development. It still has a great deal of working family farms. I looked for websites for the towns but couldn't find any, I guess their too rural to really want one, maybe someone else can find one.
Some plus's to that area are: a lot of farms, apple orchards (apple festival), close to ski resorts, close to finger lake wineries, beautiful countryside (very hilly), very easy commute (no traffic).
I never lived out there but have heard from a few people that they really love it.
The difficult part would be finding rentals out that way. Try and see if there are places in say Marcellus, Baldwinsville, the Jordan-Elbridge area, Chittenango, or the far ends of towns like Cicero, Camillus or Manlius.
