I keep hearing the Tampa Bay referred to as Southwest Florida, yet we are clearly on the west coast and roughly central north to south, so shouldn't we be considered west central Florida?

Here is the state park maps and I just don't see how they come up with the location labels. JMO of course.

Because Central Florida is the name given to Orlando/Ocala/Gainesville/Daytona type places. They are a bit further north and they aren't coastal.

A good chunk of the southwest part of Florida is just Swamp so considering it kind of starts from Naples and up we are relatively South West. When you talk to people from North Florida like Jacksonville or Tallahassee most will say they think Tampa Bay is where south Florida begins and central Florida ends.

Also.......The "panhandle" area runs East/West but is still part of the west coast measured coast line

So.....if you measure the entire west coast's coastline.....The Tampa Bay area is in the southern half of the state.....

Picture the panhandle stretched out North and South like the rest of the west coast.
