Default Tennessee Recipes

I know there's a thread already on Tennessee foods, but it's getting long and mostly it's just a discussion of what foods are favorites in Tennessee. I haven't seen a thread specifically to share "Tennessee favorites" recipes (if there's one around here already, uh, sorry).

Here's a simple recipe for Hashbrown Casserole. Easy to make, even though it does take a while to bake (hey, that rhymes!).

1 2-lb. bag southern style frozen hashbrown potatoes
1 cups sharp cheddar cheese, grated
¾ teaspoon salt
1 can cream of celery soup
¼ teaspoon black pepper
1 ½ cups chopped onion
¼ stick margarine, melted.

Preheat oven to 375 degrees. Spray a casserole dish with cooking spray. Mix potatoes with remaining ingredients.

Spread ingredients in casserole dish and cover with foil. Bake 375 degrees for 1 hour and 10 minutes. Remove foil and bake for 15 minutes longer.


I wonder if my Easy Red Beans and Rice recipe would be considered a Tennessee favorite? :-)

I move to SC from Tenn several years ago but still read the Tn board. Here is 2 of my favorites from there. Chess Pie--1 stick of butter, 1 1/2 cup of sugar, 1 Tablespoon of vinegar, 1 teaspoon of vanilla, 3 whole eggs. Melt butter, sugar and vinegar over low heat. Let stand while beating eggs. Beat well, add melted butter, sugar, and vinegar to the eggs. Add vanilla. Bake at 350 degrees, 40 to 50 minutes in an unbaked pie crust.
Barbecue Chicken
2-3 lbs chicken
2 Tbsp. brown sugar
1/8 tsp. red pepper
1/4 cup of tomato catsup
1/2 cup chopped onion
1 tsp. chili powder
1 tsp. mustard
1/2 garlic bud
1 tsp. salt
2 Tbsp. vinegar
1 tsp. paprika
2 Tbsp. worcestershire sauce
1 cup tomato juice
Cut chicken into serving pieces. Season with salt and pepper. Heat pan add oil. Brown chicken on both sides. Combine rest of ingredients in a pan and cook for 20 minutes. Drain fat from chicken, pour sauce over chicken. Place cover on pan and bake in 350 degree oven for 30 to 35 minutes.

Those sound really good! I've never heard of hash brown casserole or chess pie. I don't think I'm eating in the right places!

I looooooove chess pie!!! A couple of fun variations are to add a little bit of lemon juice to it or a little bit of melted chocolate before baking.

An old friend of mine won a blue ribbon for her chess pie at the state Pillsbury Bake-Off. But when she got to the nationals, the judges had never even heard of it.

Hik- Never heard of hashbrown casserole?? It's ubiquitous here. Every potluck, church supper, etc. has one, not to mention Cracker Barrel. I made one last week for West Coast company to go with a BBQ pork roast. They loved it.

What are southern style hash browns? Is there something different about them that makes them southern?

They're "chunkier". Not that it really matters. Any kind would work; you might use a little less cooking time if you using regular style hash browns.

Thanks alleycat. I wanted to try this and I know it wouldn't be the same without the right ingredients. If I can't find southern hash browns, I'll try the less cooking time or make my own.
