Are there enough --local-- hog farmers around Paris that a company that adverrises on tv and ships hams anywhere in the US could get enough hams for their operation ?

I have no idea in this case (maybe berry1510 can tell us). However, there used to be a large meat processing plant in Clarksville (Frosty Morn); I believe it employed several hundred people. At that time, most of the hogs and cows that were butchered came from the counties in that general area, some in Tennessee and some in Kentucky. Since that time North Carolina seems to have become the hog capital of the world, so maybe Cliffy Farm ships them in from NC.

Yes. That and Mexico. They are all owned by Smithfield Foods out of VA. It's the largest producer. Its plant in La Gloria, Mexico is suspected to be the source of the swine flu outbreak.

Smithfield owns Farmland Foods, Eckrich, Premium Standard Farms, Butterball, John Morrell, Gwaltney, Patrick Cudahy, Krakus Ham, Cook's Ham, and Stefano’s.

Read this and you realize why bacon, hot dogs, ham and pork products are so darn cheap. And no, I'm not a vegetarian. Just a worried mom.

Yes, pork is cheap.

I raised hogs in the late 70's and would have lost money if the hog prices were as bad as they are today ( 30 years later )

Beeler hams are the very best I've tasted in years and contain no growth hormones or animal byproducts (in the feed). I'd almost forgotten what real pork tasted like. You can check out their website at Beeler Home Page
