a few other things to add to the list
fried potato patties (made from left over mashed potatoes, just add chopped onions and a little flour)
apple stack cake from the dried apples that you put away in the summer
blackberry dumplins, boil black berries with sugar and add drops of biscuit dough into
poke salad
potatoe salad (even though I have never made it before)
deviled eggs
I think some mentioned turnip greens, but what about the turnips?
spring leaf lettuce, spring green onions and bacon grease (my mom loved it)
I think someone mentioned cracklin cornbread aleady
chow chow

greens that grown wild out in the field
break off when small (old ones are tough)
boil in water, rinse, boil again, rinse, boil again, rinse (to get rid of the toxins)
put in fry pan with bacon grease and crack in a few raw eggs, stir and fry up

I think actually ALL poke is poisonous, that is why you boil it and throw away the water 3 times to get rid of the toxins

I will have to look it up and get back to you. I remember hearing that no matter how much you boil the older it is bad bad bad.

Yes, the young leaves, while still poisonous can be ok with proper prep. The mature leaves are poisonous no matter what you do to them.

ROFL, I so wanted to mention that but it isn't TN unless someone has imported them.
I think I will stick to T-Cakes and such.
