I just want to remind all of you as well that Texas had a massive infusion of settlers who came not from the South or anywhere else in the USA but rather from the German states, from Norway, and from Sweden. This began before the Civil War and continued into the Reconstruction period. There were also Czech settlers and those from the Alsace (French basically often living under German jurisdiction).
Castroville just 15 miles west of San Antonio was settled by French Alsatian colonists. Germans are my far the most prevalant from Europe but Poles also help settle the SA/Austin area.
